Hello!
After uninstalling Windows Copilot, I was happy to find out you can actually assign this key to open another program.
And what better program to open than the best search tool out there, "Everything"!
However, the software needs to be registered as a Windows Copilot hardware key provider in order to work.
After some minimal digging, and based on my limited programming understanding, it seems like a pretty straightforward and easy way to do this based on this article directly from Microsoft:

Everything is not an app so it cannot register as a copilot key provider.
To set Everything to show on the copilot key:

To set Everything to show on the copilot key:
- You will need Everything 1.5.
- In Everything 1.5, from the Tools menu, click Options.
- Click the Advanced tab on the left.
- To the right of Show settings containing, search for:
hotkey - Select: hotkey_low_level_keyboard_hook
- Set the value to: true
- Click OK.
- Type in the following Everything search and press ENTER:
/show_window_key=3206
3206 is Win + Shift + F23 (aka: Copilot key) - If successful, show_window_key=3206 is shown in the status bar for a few seconds.
