I was wanting to know if there is a way to
Get Everything to read the drives labels as well.
Everything avoids using the Display name as Everything does not normally search this information.
Everything will display the true filename as it is indexed.
If you would like to see the volume label, please try displaying the following columns from right click result list header -> Add Columns -> Index Volume Label, Volume Label or Display Name.
Index Volume Label is the volume label when Everything indexed the volume (might be useful to see the volume label for offline volumes)
Volume Label is the current volume label
Display Name is the filename as it would appear in Windows Explorer.
1. What do the functions of the settings in the Tool> Options>ReFs do ?
This page is for indexing ReFS volumes.
From here you can index your local ReFS volumes and manage the USN Journal on ReFS volumes.

2. How would it affect Everything changing Tools>Options>Folders Buffer Size from (64KB) to another value ?
A larger value will not make any noticeable difference as Everything should be fast enough to process this buffer before it is filled.
With smaller values you may run into issues with Everything missing changes.
Please note: 64KB is the maximum supported size for network drives.

3. Should Fast scan be ON or OFF? How does it affect Everything?
For NTFS volumes, it should be ON.
Typically this should be enabled if you are indexing a remote network share that is on a NTFS volume.
For FAT volumes, enabling this option will cause Everything to miss changes when performing the daily rescan.
When enabled, Everything will only rescan folders that have changed, instead of rescanning all folders.
