I have recently conned a custom made NAS system to my network and add a folder on it manually on Everything.
However, it stars scanning and just never ends. This run for example have been going for 12+ hours it's still using resources under task manager notably network and memory.

If I'm understanding correctly, your main CPU user is Remote Desktop (13.2%).
Everything is using some, but low CPU (0.9%).
Its' RAM usage is (what I would consider) high, but that depends on the number of files you're indexing (& associated Properties & whatnot).
I just re-scanned my NAS, 1,778,000 items, & it took ~10 minutes, file names (size & date) only.
But you're stuck on Scanning... ?
Is \\NAS\Everything a correct location? If you set up a new directory on the NAS, say, TEST, so \\NAS\TEST\ & copy a few files into there, & only have Everything index that location, does that work as expected, displaying the files copied?

I don't really mind this usage while scanning except for the RAM as you said.

the NAS\Everything location is basically everything on my NAS which is running an Ubuntu Desktop OS. Here is a photo of what that path looks like It actually worked before and scanned fine once. I don't know why it rescanned again but ever since then it just keeps scanning and never ends.
Keep in mind the drives and content on the NAS are the same ones that were on my PC I just removed two HDDS and put them into a computer that I built just specifically to be a NAS. as of right now those are a 1TB HDD and a second 6TB HDD.
Never have I ever seen "Everything" take all this time to scan my whole PC let alone these two.
I don't imagine the transfer speed difference is that major that it's actually taking that long.

It worked now, I specified the place where my drives are mounted instead of the whole OS and it worked.

If you run into troubles again:
Please make sure there's no circular references on your NAS.
To see the current folder being scanned:
Everything will use about 100MB of RAM per 1 million files.
