This is on a NTFS volume & monitoring is enabled?
Might you have inadvertently disabled monitoring,?

It is set to "Update Indexes"

Anything peculiar with sigs.dat?
As it is, sometimes when files are written out, generally larger files (a few 100 MB or more), like maybe with transcoding a video file, or downloading a video file, Everything may pick up on a date/size before the file was completely written. (Pretty sure there was fairly recent change in that regard to fix a scenario like that.)

I think data to this file is appended without recreating it.

If these files are NTFS-indexed (see Menu => Tools => Options => Indexes => NTFS), the size and date will be updated when the files are closed.
Most likely the files are opened in an application that is still writing to it. When the application cleoses, it should be updated in Everything too.
To see the same date and size as in Explorer, you need to Folder-index these files (not recommended)
