So i know that EverythingSearch can monitor real time changes to a file system.
Does "Everything" monitor file system changes?
Yes, "Everything" does monitor file system changes.
Your search windows will reflect changes made to the file system.
I would love to be able to log this information.
Thoughts?

Suppose you could capture the (the I can't think of the name) the Ctrl+` "console", saving it to a file (which you can do), then pull your wanted data from there. (Could be large
.)
Otherwise, see if Nir might have something up his sleeve,
https://www.nirsoft.net/utils/index.html .

Sorting by recent changes will give you this information.
To sort by recent changes:
In Everything , from the View menu, under the Sort by submenu, click Date Recently Changed .
To show only recent changes and not every single file:
In Everything , type in the following search:
rc:
Recent changes should keep about a week of changes.
To export this information:
In Everything , from the File menu, click Export... .
Select a Save as type and a filename and click Save .
An option to log changes (automatically) to a file would be useful, I'll consider adding such an option.
Thanks for the suggestion.

Note: you have to enable the Load recent changes from USN journal for all disks you want to monitor (under Menu:Tools > Options > Indexe > NTFS)
Otherwise the recent changes are traced since Everything was started.
(At least that's how I remember things; can't fnd the details right now)
